Couscous Salad.

Recipe description/history:

Couscous is a type of durum wheat semolina widely used as a main dish in the North African countries where it originates. The rise of tourism and immigration has facilitated its spread to other parts of the world, where it has become very popular.

Its nutritional benefits include being a great source of carbohydrates, fiber, and protein, as well as providing vitamins, iron, and magnesium. It is low in saturated fat and cholesterol.

It is a very easy dish to prepare and offers many alternatives in terms of the different ingredients it can be paired with, making it perfect to have on the boat and turn to when you need to cook something quickly and easily.

We prepared a salad on board using packaged couscous and various ingredients that we always carry on the boat in cans. All you have to do is mix them together and season to taste. However, it can also be made with meat, fish, vegetables, nuts, and various herbs, or simply served as a side dish with another dish.

Ingredients:

– Couscous (approximately 60 grams per person).

– Roasted red peppers.

– Black olives.

– Cherry tomatoes.

– Red onion.

– Salt and extra virgin olive oil.
